Happy New Year! Every year we make resolutions of what we are going to stop doing or cut out. Make 2017 the year of more! Make healthy intentions and add in more of the “healthy.” It’s always easier to add than take away!
- 2 cups romaine lettuce
- 1/2 baked sweet potato
- 1/2 cup black beans
- 3 oz of tempeh
- 1/4 cup grape tomatoes
- 1/4 cup cut up beets
- 1 tsp olive oil
- 2 tbs Braggs apple cider vinegar
- 1 tbs BBQ sauce
- Sprinkle of garlic powder
- Pam or non-stick pan
In a bowl, mix the lettuce, garlic powder, olive oil and vinegar. In a small pan coated with Pam on medium-low heat, cook the tempeh until warm. Take the tempeh out and coat with the BBQ sauce (save a little for later to drizzle on the salad). Add the beans and sweet potato and heat until warm. Place the salad on the plate and top with the tomatoes, beets, tempeh, black beans and sweet potatoes. Drizzle with BBQ sauce and enjoy!
