“Eggless” Veggie Cups

Wow! I’ve been looking for an egg replacement for a while (besides tofu) since I don’t eat eggs. Can you believe these delicious little cups are made with chickpea flour? That’s right—chickpea flour. They are high fiber and high protein which is a perfect mix to start your day. I found a recipe from themostlyvegan and decided to try it out! I sprinkled a little hot sauce on these and they were delicious!


  • 2 cups spinach
  • 1 yellow onion, chopped
  • Flour baking spray
  • 2 cups chickpea flour (garbanzo)
  • 1/4 cup nutritional yeast flakes
  • 1 tsp baking powder
  • 1 tsp pink Himalayan sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Hot pepper flakes (optional)
  • 2 1/2 cups water

Heat the oven to 400 degrees. In a large bowl, combine the flour, yeast flakes, baking powder, salt and pepper with the water and whisk. Set aside and heat a pan with cooking spray and Sautée the onions and spinach–I seasoned it with a little salt and pepper, garlic powder and a sprinkle of hot pepper flakes. Spray a muffin tin with baking spray and spoon in the veggies on the bottom of each muffin holder. Fill the batter up about 3/4 full and stir with a spoon to make sure the batter goes under the veggies. Bake for 30 minutes and check with a toothpick to make sure it comes out clean. Let them cool and take them out and enjoy!
