Strawberry, Spinach and BBQ Tempeh Salad



  • 3 cups of spinach
  • 2 strawberries, sliced
  • 1 tsp sunflower seeds (unsalted)
  • 3 walnut halves
  • 1 tsp olive oil
  • 1 tbs white balsamic vinegar
  • 4 strips of tempeh
  • 1 tbs BBQ sauce


Mix the spinach with the oil, vinegar and sunflower seeds in a bowl. Transfer to a plate and top with the walnuts and strawberries. Heat a small skillet on low and warm the tempeh (about 5 min) and coat with the BBQ sauce. Place on top of the salad.

Enjoy the smoky flavor of the BBQ tempeh with the sweet flavor of the strawberries and white balsamic vinegar!
