Spinach & Black Bean Quesadillas


  
Ingredients:

  • 1 can of black beans, rinsed and drained
  • 1/2 red pepper, chopped
  • 1 onion, chopped
  • 2 cups spinach
  • 1 tbs olive oil
  • Pam or non-stick spray
  • 1/2 cup Daiya cheddar cheese
  • 1/4 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 3 tortillas ( I used Tumaro’s 60 calorie 9 Grain with Chia)

Directions:

Heat oil in the skillet and add the onions and peppers. Cook about 5 minutes or until translucent. Add the beans and spices. Stir and then add in the spinach. Cook until the spinach is wilted and turn off the heat. 

Take another skillet and spray it with non-stick spray. Heat up a tortilla on low for 1 minute and add the spinach and black bean filling to half of the tortilla. Add a sprinkle of Daiya cheese on top. Fold over the tortilla and cook about 3 minutes on each side. You will have enough mixture to make 2 more quesadillas. Be sure to spray the pan before you cook another quesadilla.

Cut each quesadilla in half and top with your favorite hot sauce or salsa!
