Chickpea Avocado Smash


I love chickpeas and I love avocado, and this recipe marries them together beautifully.This smash is super easy to make and healthy for you too!

  
Ingredients: 

  • 15 oz can of chickpeas
  • 1 avocado
  • Juice of 1 lemon
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder 
  • Pink Himalayan sea salt and pepper to taste

Ingredients for Dijon coleslaw:

  • 1/2 of a 14oz. bag of coleslaw
  • 1 tbs of Dijon mustard
  • 3 tbs of apple cider vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Pink Himalayan sea salt and pepper to taste 

Directions:

Mash together the chickpeas and avocado. Add the remainder of the ingredients and stir. 

Add all of the ingredients for the coleslaw and mix. 

You can eat this “smash” plain or (like the picture) on top of a wrap with spinach, coleslaw and tomatoes.
