Now that spring is upon us, it’s time to eat healthy, fiber filling, flavorful salads. I was craving lemons and remembered how delicious this chickpea salad splashed with fresh lemons and parsley is! Not only is it delicious, it has a ton of nutritional benefits.
Chickpeas are filled with fiber and contain about 12.5 grams per cup, which is about 50% of your Daily Value. The fresh squeezed lemon juice boasts a ton of healthy benefits. It includes pectin, which has been shown to aid in weight loss and stimulate your digestive track. Even though lemons are acidic, they are actually a great source of an alkaline food that helps balance your pH. Furthermore, the parsley is rich in Vitamin C, B12, K, and A. Parsley also helps flush toxins out of the body and has anti-inflammatory properties.
2 15 oz cans of chickpeas, rinsed
Juice of 1 large lemon
2 tbs organic olive oil
1 cup fresh parsley, chopped
Himalayan sea salt to taste
Mix all the ingredients in a bowl and place in the refrigerator for 30 minutes before eating. Enjoy!
