Pumpkin Date Granola Bars



If there is one thing that I love to do, it’s to make my own healthy, non-processed version of granola bars at home. I always like to feature a “star” ingredient, and in this case, it’s raw pumpkin seeds. I purchased a huge bag of them at the health food store yesterday and decided to throw together some ingredients I had on hand, and voila, pumpkin date granola bars were born!

Pumpkin seeds are nutritional powerhouses that contain magnesium, manganese, copper, protein and zinc. These help with the pumping of your heart, proper bone and tooth function, and proper bowel function. Zinc is great for immunity, sleep, mood, eye, and skin health. Pumpkin seeds are rich in healthy fats, antioxidants, and fibers, as well as, provide benefits for heart and liver health.

These bars are extremely easy to make, and you will feel good knowing what ingredients you put into them.



  • 2 cups of gluten free oats
  • 1/2 cup of Spectrum Decadent Blend Chia, Flax (with Coconut and Cocoa) —-Found this at the health food store, it’s delicious!
  • 1 tbs cinnamon
  • 1/2 cup of sunflower seeds
  • 1/2 cup of raw pumpkin seeds
  • 10 pitted dates cut into small chunks
  • 1 cup peanut butter
  • 1/2 cup maple syrup


Combine all of the dry ingredients, then mix in the dates, peanut butter, and maple syrup. Spread in a parchment paper lined 9×13 glass pan and place into the freezer. Cut them into the size of a standard granola bar, put them in a ziploc bag, and take them with you to work! Enjoy!
