Carrot Beet Juice



There is nothing more that I love than to spend each Sunday going to the local farmers market and picking out the freshest produce I can find. One of my favorite foods to pick up is fresh beets with their roots still intact. Unfortunately, I still have a few weeks before the farmers market opens, so I have to settle for buying beets at the grocery store. I found this brand called Love Beets, which are already cooked and peeled for you to use, and they are a great substitute (and time saver) for making a delicious carrot beet juice!

I love the earthy, sweet flavor of carrot beet juice, not to mention all of the health benefits. Carrots contain Vitamin A, B1, B2, B3, C, E, and K, folate and beta-carotene, which are great for beautiful skin, anti-aging, improved vision, and cancer prevention. Beets have vitamin A, C and B complex, magnesium, iron, potassium and copper. Beets cleanse the blood and are used as a diuretic. Beets are used to aid in weight loss and are so sweet, they will even keep that sweet tooth at bay!

The plentiful nutrients in this juice will give you an immense amount of energy. I drink carrot beet juice prior to running, and I can’t even believe how much energy I have. My running time is faster when I drink it, not to mention I feel like I can run forever. So give it a try if you want that extra “spring” in your step!



  • 8-10 organic, peeled carrots
  • 1 cooked beet, peeled (use cold, not when it’s warm, or use 1 Love Beet)


Place the carrots and beet in your juicer, drink and enjoy!  (Warning: you will have tons of energy once you drink this!)
