Blueberry Coconut Smoothie


Today is the first day of Spring, so say goodbye to the winter blues and say hello to the new blues, blueberries, that is! I love this time of year because you can get fresh, organic fruit, be creative and whip up some delicious smoothies! This smoothie has all the ingredients to help you shed that unwanted winter weight.

Blueberries have so many health benefits. The polyphenols found in them can break down belly fat, and reduce the risk factors for metabolic syndrome. Blueberries only have about 100 calories per cup, and 4 grams of fiber.

New studies show coconut fats–medium-chain triglycerides (MCT)–are absorbed directly by the liver, not stored in fat cells. This means they produce energy much faster, raising the body’s metabolism. The medium-chain triglycerides in the coconut flakes help burn more calories, contributing to weight loss. Enjoy this smoothie, and cheers to Spring!


  • 1 cup fresh blueberries
  • 1 cup almond milk
  • 1/2 banana
  • 1/2 tsp coconut oil
  • 1/2 tsp flax
  • 1 tsp shredded coconut flakes (save a little to sprinkle on top)
  • a few cubes of ice (if using frozen blueberries, you don’t need extra ice)


Blend all ingredients in a blender or Nutri-bullet.
