Meatless Monday: Stuffed Mushrooms

If you are a big fan of mushrooms like I am, then you need to try this recipe! Quinoa, spinach, onion and garlic make this a savory dish or appetizer that you can prepare quickly and bring to a party.

Ingredients:

  • 1 package of stuffing mushrooms
  • 1 cup of quinoa
  • 2 cups vegetable broth
  • 5 cloves of garlic
  • 1 cup of onion, chopped
  • 1 cup of spinach, chopped
  • 2 tbs of olive oil
  • 1/2 cup of whole wheat Panko crumbs

*You can add red hot pepper flakes to the mixture if you like it hot!

Directions:

Pre-heat oven to 350. Combine quinoa and vegetable broth to a boil and let simmer for 15 minutes. While that is cooking, sautee spinach, garlic and onions in a pan with the olive oil for 6-8 minutes. Add the quinoa to the pan with the spinach, garlic and onions. Remove the stem of the stuffing mushrooms and fill with the quinoa mixture. Top with Panko crumbs, drizzle with olive oil and bake for 20-25 minutes. Enjoy!
